How to Stuff Tortellini
- 1). Prepare the pasta dough according to the recipe you are using. Roll the pasta dough out into strips no thicker than 1/8 inch using a rolling pin. Alternatively, if you have a pasta maker, you can roll the dough though it until it is on the lowest setting of the rollers.
- 2). Cut the dough strips into 2-inch squares, using a sharp knife.
- 3). Place 1/4 to 1/2 tsp. of stuffing mixture on the center of each square.
- 4). Brush the outside edges of the squares with water, using the pastry brush. This will help the pasta form a good seal.
- 5). Pick up one corner of the pasta square and fold it over to the opposite corner to form a triangle. Press the two edges together to create the seal around the stuffing.
- 6). Wet the two long ends of the triangle and wrap the stuffed pasta around your finger, making a circle. Press the two ends together.
- 7). Fold the top of the triangle to the inside of the circle. The tortellini is now stuffed, complete, and ready to cook.
