4 Summer Recipes
Summer is the perfect time to entertain friends. You can sit outside, enjoy some nice rose wine and great conversation. Some delicious summer recipes that your guests won't be able to resist include:
1. Chorizo & tomato salad:
Cut up some ripe summer tomatoes into quarters. For extra flavouring throw in some red onion pieces and thyme and drizzle balsamic vinegar overtop. In a hot pan fry the chorizo slices until they are brown on both sides. Add the chorizo to the rest of the dish and serve.
2. Layered roast summer vegetables:
If veg is what your guests are after then serve them this delicious vegetarian dish of roasted summer vegetables. Slice 4 large courgettes, 5 ripe plum tomatoes, and 2 aubergines. Arrange them in an alternating circular pattern around a large casserole and sit a head of garlic on the top centre. Throw in some rosemary, season with salt and pepper and add a light drizzle of olive oil. Put it in a 220C oven and let it all cook for about 50 minutes. Take it out of the oven and let it cool for a few minutes. While it cools, remove the head of garlic, separate the cloves and drizzle them over the top of the dish.
3. Summer pasta salad:
An easy and simple summer pasta salad recipe is to slice up large or cherry tomatoes and throw them in a bowl. Cut up some pieces of brie cheese and throw them in as well. Then add boiled pasta (could be spaghetti, penne, or whatever you want really). The hot pasta will melt the brie cheese which goes really well with the fresh and cool tomatoes. At the very end add a tablespoon of pesto and mix it all together.
4. Baked peaches with maple syrup and vanilla:
And for desert, you'll want something light and sweet. Set the oven to 200C, clean the peaches and slice them in half. Place the fruit, cut side up, in a shallow baking dish. Put 4 tablespoons of maple syrup in a bowl with a pinch of vanilla seeds and the juice of one lime. Add the mixture to the top of the peaches and bake for approximately 35 minutes, or until the peaches are tender.
The trick to summer cooking is to keep it light and flavourful. You'll want to make good use of fruits and vegetables that are in season at the moment. Then set your table, gather your friends and enjoy a lovely dinner party out in your garden.
