"This is an extravagant name for a trifle!" says Artusi. "However, the French have granted themselves the right to lay down the law in this and in other matters; the name has become established, and now we must accept it. This is another sauce for steaks. Mince a pinch of parsley, place the mincings in a cloth, and squeeze them in cool water to remove the tart juices from the herb. Then work the parsley into a paste made with butter, salt, pepper, and lemon juice.
Heat the sauce in a plate or pan over the fire, without letting it cook, and dip your steak in it upon removing it from the grill. This sauce can also be used with fried cutlets."
