    Removing Casing

    • 1). Cut about 1/2 inch off from the tip of the salami with a small, sharp kitchen knife.

    • 2). Stick the tip of the knife between the inside of the casing and the edge of the meat, as far lengthwise for as much of the salami that you want to eat.

    • 3). Rotate the blade of the knife around the inside of the encasement and make sure the blade always faces away from you.

    • 4). Cut the edge of the encasement length-wise with the knife and peel it off with one pull. Now you can cut and serve the salami.
