What Is Linguisa Sausage?
- Portuguese linguica or linguisa is an uncooked, smoked sausage made of ground pork butts and seasoned with cinnamon, cumin, garlic, black pepper and salt.
- Linguisa can be served as a side dish to a heavy main meal containing starchy foods such as rice and beans. It can also be cut up and used to season soups or stews. It has a lighter flavor than some of its spicier cousins, such as the chorizo.
- If it is not available at your local grocery store, Amazon.com lists one particular seller and gives links to four others. A complete recipe may be found online at Epicurean (see references), if you wish to make your own linguisa.
