How to Prepare Salmon for Grilling

1Prepare the grill by spraying it with a nonstick cooking spray, such as Pam. Preheat the grill to a medium heat or follow the heating guidelines for a specific recipe.

Briefly rinse the salmon to remove any residue. Pat the fish dry with paper towels.

Place the salmon on the cutting board. Remove the scales if this has not already been done by a butcher, leave the skin intact.

Squeeze the juice from one lime and one lemon onto both sides of the fish. Gently work the juices into the salmon with your fingers.

Season both sides of the salmon with salt and pepper. Drizzle olive oil on both sides of the fish. Spread the oil to cover all of the fish, using your fingers or a pastry brush.

Transfer the salmon to the grill. Cook the salmon for approximately 5 minutes per side, or until the flesh is flaky. Do not overcook the salmon or it can be dry and brittle.

Use garlic, salt, pepper to season the salmon and serve it with a white wine sauce. Marinate the salmon in teriyaki sauce prior to grilling and serve it with fresh pineapple and mango for a Hawaiian flare.
