Do you know how to cook Vegetable fry? It tastes awesome when served with tomato salad, pickles and spring onions, this makes a complete meal.
Ingredients used for Vegetable fry (Serves four people): 1 medium size aubergine, 1 very small cauliflower, 4 small sweet peppers (red or green, whole), 1 large courgette, 4 chilli peppers (whole), 2 cloves of garlic (crushed), juice of 1 lemon, small bunch of fresh parsley (for decoration), vegetable oil, salt and black pepper.
Preparation Method for Vegetable fry: Wash and dry all the vegetables.
Slice the aubergine and courgette into fairly thin rings and divide the cauliflower into pieces.
Heat vegetable oil about 2 cm deep in a medium size pan, then, Separately fry the cauliflower pieces, the aubergine rings, and the courgette rings until just golden all over, remove and drain on kitchen paper.
Puncture both the sweet and the chilli peppers with a pointed knife, fry them lightly on all sides, remove and leave to drain.
When all the vegetables are cool, place them attractively on a large flat platter and sprinkle with salt and black pepper to taste.
Add the crushed garlic to the lemon juice and [optional] pour the mixture all over the vegetables.
Decorate with parsley.
Serving Tips for vegetable fry 1.
Serve cold with salad, pickles and spring onions.

Serve with warm Arabic bread.

Home-made yoghurt may be served on the side, or poured on the vegetables.
