The Essentials Of Perfect Pizza Making

27
When it comes to cooking the perfect pizza, the hotter the oven the better if you really want to have a crispy, delicious crust, which is the foundation for all good pizzas.
Most commercial pizza ovens are set at temperatures upwards of 500 degrees Fahrenheit and use pizza stones or similar setups to quickly but thoroughly cook pizzas.
Using a pizza stone is one way to ensure your efforts result in a delightfully crisp crust.
Pizza stones are made of earthenware like terra cotta or unglazed ceramic tile and perform the important tasks of cooking the pizza evenly while extracting moisture from the dough and the toppings.
Naturally you should use the toppings of your choice for making your perfect pizzas but some ingredients are much better for baking on top of dough than others.
Although vegetables are a great choice, using too many of them will result in soggy pizzas even if you do use a pizza stone.
Precook the vegetables with the highest water content first before adding them to the dough to solve this problem and make sure you do not use too much sauce, as that will also cause a soggy crust and an unevenly cooked pizza.
A pizza peel is another essential to good pizza making especially if you are using a pizza stone.
Pizza peels are large wooden paddles used for transferring pizzas to the stone and should be dusted first with cornmeal for the absolute best results.
The cornmeal will allow the dough to slide easily from the peel instead of sticking and ripping apart.
The easiest way to use a peel is to place the tip of the paddle near the far edge of the pizza stone and then quickly pull it back toward you allowing the dough to slide down onto the stone for cooking.
Of course you do not have to buy stones and peels if you want to make your own pizzas at home as they can be baked right in the oven on a large pan or even outside on the grill.
When making pizzas on the grill, medium to medium high heat works best and you will want to make sure the bottom of the dough does not burn.
