Bean & Brocolli Stir Fry
Serves 4
500g broccoli or green beans
2 medium-sized red onions,
peeled and sliced
4 Tbs chilli oil
1cm piece ginger, chopped finely
1 small fresh chilli, sliced
2 cloves garlic, thinly sliced
250g baby tomatoes
1x 400g can cannellini beans,
drained and rinsed
4 tsp soya sauce
15g coriander or basil leaves,
roughly chopped
1 Tbs sesame seeds, lightly
toasted in a dry pan
Cut broccoli into small florets, tip into a heatproof bowl and pour boiling water over them. Allow to stand for 5 minutes, drain and set aside.
Heat half the oil in a nonstick pan and gently cook onion
until soft. Add grated ginger, chilli and garlic. Tip onion mixture into a bowl and return the pan to the heat.
Add the remaining oil; turn up the heat and sauté broccoli quickly. Add tomatoes and stir fry for 1 minute.
Add cannellini beans, soya sauce and coriander. Place in a warm serving dish and sprinkle with sesame seeds and sprouts.
Serve with additional steamed vegetables
